In place of polished rice, it uses four heritage millets — Foxtail, Kodo, Little and Barnyard — combined with protein-rich moong dal (green gram), roasted cashews, and the classic tempering of curry leaves, ginger, cumin, pepper, green chilli and a touch of asafoetida. In South Indian tradition these small grains are known as siruthaniyam, valued for being nourishing yet easy to enjoy every day.

Ways to Make It

Stovetop

  1. Add 1 cup of Pongal Mix to 3 cups of water.
  2. Cook on medium flame for 10–12 minutes, stirring now and then, until soft and creamy.
  3. Add salt to taste and finish with a spoon of ghee.

Pressure cooker

  1. Combine 1 cup mix + 3 cups water + salt.
  2. Cook for 3 whistles.
  3. Stir well, drizzle with ghee, and serve hot.
